Note: This is vegan and vegetarian friendly
1/2 cup of red peppers
1/2 cup of green peppers
3/4 cup of beefless grounds (Gardein)
1/2 teaspoon of lemon peppers
1 tablespoon of mrs. dash southwest chipotle seasoning
1 tablespoon of avocado oil
- Preheat oven to 350 degrees. Cut up red and green peppers in long slices. Once done, wash and strain them. Put them in a medium bowl off to the side.
- Pull out a half a sheet of aluminum foil and lay it on a baking sheet or a flat iron skillet.
- Spread out the red and green peppers on to the baking sheet or flat iron skillet. Then measure out your beefless grounds and sprinkle them over the peppers evenly. Next add your chipotle seasoning and lemon pepper seasoning. Then lastly add your avocado oil on top. Take a wooden spoon and mix the ingredients well.
- Let them cook in the oven for about 15-20 minutes.
- Serve immediately.
Optional: You could also add a side of jasmine or basmati rice with this dish as well.
